Boring Personal Journal Update Time :D

Remember a few weeks back when I posted about the baby cravings and the stress it was causing? Well, I've managed to get through it. I still want a baby one day but I've gotten over the going crazy part.
I think I was having a really hard time not having a short term (5ish years) life plan. All my life I was working towards the next step. Then, all of the sudden I was married and not set on what would come next. I thought the next step would be to start a family. I'd watched so many friends have babies of there own and I really do LOVE everything about them but in the past couple weeks I've had a change of heart. I know now that when I do have a baby it will break my heart to be away from him/her at all. I would ideally like to be able to stay home at least part time.
That means re-evaluating our budget in a big way. We like to spend our money. It's terrible, I know, but he is as bad as me. I've always had a hard time turning down a great deal and my very frugal mother was always scolding me for spending my money. It sort of became a guilty pleasure and now I'm paying for it, literally.
(ANYWAYS, back to where this was going...)
So I've come to realize, to have the life I want with our sweet little future family, I need a bit more time to prepare. And for the first time since dropping out of college, I feel like I finally have a plan for the next few years!
Although I know things are never set in stone, It's nice to have an itinerary on this journey through life.
I'm going to start a new blog about our goals and plans for life over the next couple years. It will be a place I will post about our struggles and experiences on working our way out of debt and into buying our first home. I do hope hope you'll check it out and leave me some feedback. Mini's Cupcakes

I LOVE to support local businesses. I find that at least 80% of the time their goods are higher quality than larger chains.
Today we had a birthday in the office and I was put in charge of finding cupcakes. Most places needed at least 48 hours notice but not Mini's!
They were super helpful over the phone and even better in person. I ordered 14 cupcakes and they had them nicely boxed and shrink wrapped before I got in. They say the cup cakes are mini but they're really not too tiny. They're just the right size to satisfy a cupcake craving without going into a diabetic coma.
Mini's offers several different (but all totally adorable) varieties to choose from. They are $2.25 a piece but the time that obviously goes into decorating these beauties makes them well worth it. They taste amazing too! The shop is the most adorable one I've seen in a long time. It's fully decorated with cute vintage furniture.

I follow several blogs who highlight great deals, freebies and/or coupons around the web. One of them is Just Married With Coupons. If you've never checked them out, I highly recommend you do.

Family Picture

My mom needed a picture of our little family to include with her Christmas letter that she sends out each year. We really didn't have any good ones from anytime recent so we decided to take one. I love how festive we were able to get the set up but trying to get the dog to look at a photographerless camera and running to get in place in 10 seconds was quite the challenge... In the end I decided this is my favorite. We had to use the fisheye attachment because our living room is small and I wish I had been smiling but regardless off all the things I hate about this picture, Watson makes it adorable!

And here is the same picture with a warm vintagey edit on it.... Not sure how I feel about it.

And this gem, I caught while setting it all up.... He's such a good doggy daddy.

Christmas Time Is Here!

Wow, Can you believe it's already December?! This year has flown by. It seems each year goes faster than the one before. I'm very excited for the holidays this year and soaking up every bit of cheer I can before the poopy part of winter gets here.
I put up my tree the day after Thanksgiving but had no ornaments until the day before yesterday. I finally got it decorated and, yesterday, finally took some pictures with my camera, not my phone. What do you think? I think I'm going to go back to the store for more garland but I love all the sparkly ornaments. To me, sparkles are the epitome of Christmas!

Tasty Tuesday {6} ~ Dulce De Leche Caramel Apples

Another EASY one for you! The best part about this treat (aside from taste) is that is seems like a lot more work than it is. It's a great party dish or anytime snack!

Making Dulce De Leche is unbelievably easy. You'll need one to four cans of sweetened condensed milk, a crock pot or large pot on the stove and water. All you need to do is peel the labels off your cans, place them in the pot, fill the pot with water making sure the cans are completely submerged and turn the crock pot on low for eight hours or high for 4 hours or boil on the stove for 4 hours and let cool. Now you have cans of Dulce De Leche Caramel!

Now for the apples. All you need is the apples, a knife and spoon. Selecting your largest apple, slice off the top half inch or so of the apple. Then with your knife, carefully cut a circle inside the apple being sure to leave about a half an inch between the edge of your circle and the skin of the apple. Using your spoon, scoop out the circle and carve the apple into a bowl. Fill the apple with caramel and surround with apple slices. Done! Easy right?

Tasty Tuesday {5} ~ Home-Made Fudge

WARNING: NOT A LOW CALORIE TREAT!!

As long as I can remember, every year for Christmas and Thanksgiving my mom has made this fudge. One of my favorite things about getting ready for the holidays was fighting with my siblings over who gets to "lick" the bowl. Now that I'm a grown up (*tear), I decided it's time I make my own. While out at my mom's on Saturday, I copied down a recipe written on an old, discolored post it note. The was the recipe she had written down years ago while her mom explained how to make it. I love traditions like this. 

Ok, enough nostalgia for one post. I'm sure you all just want to find out how to make this fudge anyways! It's really not too difficult. Most other fudge recipes seem daunting to me when they call for a candy thermometer and such. This was surprisingly easier than I had expected. So, here's how it's done!

Ingredients: 
4 1/2 Cups Sugar
1 Can Evaporated Milk
2 Sticks of Butter or Margarine
1 Jar of Marshmallow Cream
18 Ounces Semi-Sweet Chocolate Chips
1 Teaspoon Vanilla















In a large pot, combine sugar and evaporated milk. Turn stove on medium and stir.  

Once sugar has dissolved into milk, add butter. Continue stirring and bring to a rolling boil. 

Continue boiling and stirring for 10 minutes.

After 10 minutes of boiling remove from heat and add marshmallow cream. Stir in cream well. 

Once cream is mixed evenly, stir in chocolate chips. 

Add a teaspoon of Vanilla. Stir until evenly mixed.

Using the wrappers from your two sticks of butter, lightly grease the bottom and edges of your container (a 9x12 works well or a few loaf pans). 

Pour in the fudge and let it sit out to cool for a bit. Once it has cooled a bit slice the fudge into bite sized pieces. Then leave in the refrigerator for several hours to set. 

Then enjoy! (In moderation, unless you're hoping to go into a diabetic coma)
